Hello dear ones,
With the autumn being full in seasons-beautiful colorful nature and the sunny but colder days, Halloween, new moon and what not… I still have two weeks of volunteering. Wow, I have many mixed feelings, sad for it ending but happy for the new beginning and the change of energy. Don’t mind me being in my emotions and giving a creative and very personal touch on my blog. My project coordinator suggested that I start on working on my Youth Pass this week since things are slowly coming to an end, so I did that. I reflected through this past year, mostly through my blogs, I realized how much I have gained and achieved through this experience and what an amazing opportunity this has been for me. I really am amazed by this volunteering program, and I think that I am just now realizing it. To be able to learn so many new things, gain so many new skills, meet so many new people, and have so many new experiences (some of that you never even dreamed of) is a real blessing. And to be able to do it in an environment that allows you to do things at your pace and with as little pressure as possible, it is something I really suggest to all people under 30. At least my environment was and is like this, I am talking about the GSV organization, but I hope and believe that all of them are like this.
It is amazing and necessary to take time to look back and see what we actually did through the year. I know I wrote about this in my blog about mid-term evaluation, but now the experience is full and more circled.
I also remembered, during my reflections for the Youth Pass, that I had the wish to write recipes for the blog from time to time. As the spirit of pumpkins is being very trendy this week, I will share with you delicious recipe for banitsa with pumpkin also known as Tikvenik:
Ingredients:
Filo dough 500 gr
400gr shredded pumpkin
3 tablespoons of flour (which ever kind you prefer, I use limets)
Half a cup of oil
Half cup of water
Half teaspoon of baking soda
2 teaspoons of cinnamon
3 tablespoons of honey
We mix the flour, baking soda and the oil in a cup, then we add the water and cinnamon. This “sauce” (as I like to call it) we spread on each two sheets from the filo dough, and then spread part of the shredded pumpkin. We need to divide the pumpkin material so we can have for all the filo dough sheets. Then we roll it. When we finish with the filo dough, we can spread whatever is left from the sauce on top. We bake it on 190 degrees Celsius for 30 minutes or until golden brown. We wait until it cools off a little bit and spread the honey on top. Bon appétit!
Unfortunately we rescheduled our visitation to the center of our GSV member Varvara, this weekend. Hopefully it will happen next weekend before my project finishes.
This week I continued on working on the translation of the instructions and also I was re-editing the video for LAND Denmark. Things are going slowly with the edit but I hope that we will have it done and translated until the end of next week.
